Our coffee from Costa Rica is from Oscar and Francisca Chacon of
Finca Calle Lajas. The micromill is also one of the only certified-organic
mills in the area, and the Chacons take their environmental impact very
seriously. The beans we buy from Finca Calle Lajas are a Black Honey
process. Basically, the skin or mucilage is left on the coffee and the
coffee is dried slowly. Black Honey coffees will express fruitier/jam like
flavors with more sweetness. The light roast is a very mild, clean coffee
with a bright, sweetness and fruit jam and toffee flavors.
