This Fair Trade Organic Arabica coffee comes from the 543 smallholder members of Cafetaleros de la Bioversidad de Chiapas, an organization that was founded in 2011 to help local growers both find a market for their main crop (coffee) but also provide resources and support for diversification. The producers pick their coffee ripe and deliver it for depulping the next day. It's fermented underwater for 25 hours before being washed twice and spread on patios to dry. The drying takes around 3 days. In the cup you will taste bakers chocolate, roasted nut and warm honey.
