Our Fair-Trade Organic coffee from Mexico comes from several different cooperatives in the
southern Mexican state of Chiapas, along the buffer zone of El Triunfo Biosphere Reserve, one
of the world's most diverse forest reserves. In the highlands of the Sierra Madre de Chiapas, the
reserve contains Mesoamerica's largest continuous cloud forest, and is a refuge for thousands
of plant and animal species. The coffee is depulped the same day it's harvested, then given a
12–18-hour fermentation in tanks or buckets before being washed clean of mucilage and dried.
Drying typically takes place on patios or in mechanical dryers. The Cup: Mild, dry and veryclean. Cocoa and toffee flavors.

This Fair Trade Organic Arabica coffee comes from the 543 smallholder members of Cafetaleros de la Bioversidad de Chiapas, an organization that was founded in 2011 to help local growers both find a market for their main crop (coffee) but also provide resources and support for diversification. The producers pick their coffee ripe and deliver it for depulping the next day. It's fermented underwater for 25 hours before being washed twice and spread on patios to dry. The drying takes around 3 days. This is dry, clean cup of coffee with chocolate and roasted nut flavors.
